New Top-Class Chef on Board

Margot Janse (ranked 37 amongst the best chefs worldwide) has been appointed as the new top-class chef to create meals for KLM's World Business Class for a ten-month period starting 01 December 2009. She hopes to pleasantly surprise KLM's passengers.

In daily life, she works as the Chef de Cuisine at Le Quartier Francais in Franschhoek, South Africa. She has created three different World Business Class menus. Given the choice, her meals reflect the flavour of South Africa - so many cultures, so many tastes.

When KLM first asked her, she visited Marfo, the company that prepares the meals, and KLM Catering Services: "I was really impressed by what they do, and said 'Yes!' without hesitation.  What's more, three-star chef Sergio Herman was also on the KLM team, so I'm honoured to have been asked!"

Cooking for passengers in the air differs from her usual fare: "I listened very carefully to what the people at KLM Catering Services and Marfo told me.  they know exactly what works in the air - and what does not.  Everything has to taste just right, for example.  And there's more to it than just adding salt; other options include spices or citrus flavouring."

She was somewhat concerned about warming up the meals.  But fortunately, she could cook 'sous vide' or under-vacuum: the meat or chicken is packed in airtight plastic bags and placed in hot water under boiling point to cook gently.  Janse: "Tastes delicious.  When the ingredients are warmed up later in the aircraft oven, it doesn't affect the flavour of the meat."

World Business Class lounge

She hopes to pleasantly surprise KLM's passengers.  But she believes, the real treat will be in the use of exceptional herbs and spices: "The dishes on board boast my philosophy and favourite flavours.  My creations.  Yes, Margot on a platter!".

Access to the lounge was this year opened up as a paid option at Amsterdam Schiphol Airport and is now being offered at OR Tambo International Airport as well, subject to availability at a charge of €35 (credit card only) or 5000 Flying Blue Miles.

Eligibility:

  • Club 2000 and Flying Blue Elite Plus members are allowed to invite extra guests (one guest for free and extra guests must pay for lounge access)

  • Flying Blue Elite Silver members are entitled to paid access, however this is for themselves, no guests allowed.
